I remember when I was growing up I could not stand the taste of spinach, what did I know anyway, haha.  As an adult I have a love love affair with this bright green joy of leafy spinachness.  It is such a super food packed with so many health benefits, which is why you see it in those powerful green smoothies and just about any healthy eating plan that is out there.  But, did you know that this super green powerhouse has some of the most powerful benefits to your skin?

It has one of the most important vitamins to the skin, Vitamin C.  Vitamin C is responsible for collagen production.  Why should you care, well collagen is a protein found in the structure of the skin, 75% of your skin to be exact.  Inside the skin you have collagen that helps provide support for the structure of the skin.  You see with lack of collagen comes those fine lines and wrinkles, and who wants that- yeah got your attention did I 😄 .   As we age our collagen production slows down, it happens to the best of us, so it’s even more important to focus on giving your body and skin the proper nutrients that it needs to thrive every day.  We are what we eat and our skin is a direct reflection of that.  By adding spinach to your daily diet rich in Vitamin C, will be absorbed into our body aiding in collagen production, leading to a firmer texture which lessens the appearance of wrinkles.

Manganese is a mineral that is also found in leafy green spinach.  This mineral is responsible for two important functions, collagen production as well as being an antioxidant.  You already know about the importance of collagen as it relates to the body, but what about antioxidants, and why should you be excited to eat your spinach?  Well the science of it all is that antioxidants help fight against oxidation, which is a natural process of the body.  When environmental factors such as sun exposure, stress or smoking, trigger this process to go into over drive it causes the cells to oxidize and create free radicals which can lead to cellular damage.  Antioxidants found in spinach helps to counteract the potential damaging affects of these free radicals, halting any damage done to those precious skin cells.  Remember all you want is healthy skin cells, the healthier your skin the better your skin looks and less reactive it will be and appear.

If you are not encouraged to eat your spinach now, well you just should.  Try it in a smoothie, a great way to mask the taste and start the day off on the right foot.  Or you can do what many other people in the world do, myself included, eat it in a salad, in place of lettuce on a healthy turkey or veggie burger.  At the end of the day it is just too good for you to not have as part of your diet every day.  Just think as you eat your spinach, I will have the most beautiful skin in the world with firm skin that is producing plenty of collagen and healthy skin cells.  So eat your spinach, cause you have to honor our special national day of observance, National Spinach Day!

Much Love,

Nic!
