Green Sauce Summer Loving | Food With Love

Hi my loves and Happy #FeedingYouFriday!  It may not be officially summer but where I am it has been experimenting with what summer feels like the past month now with temps in the 80’s with days of high humidity.  Yay for summer…

A couple of weeks ago I went to a farm to tour the grounds for the Community-supported agriculture box that I have delivered through Fresh Harvest.  They gave us a tour of the farm grounds, talked about bees, had a mini playing in the dirt session where we could take herbs home with us, and they also had a demo on how to prepare foods using herbs.  It was just so nice to be in the middle of the city surrounded by growing plants that help to feed and sustain people.

It was during this experience that I was reminded how good this vibrant green sauce was and just how ridiculously easy to make.    What is this great wonder sauce of goodness that I speak of you ask?  It is what the food gods call Chimichurri sauce.  It is typically used on grilled meats   that complements all foods from vegetables to protein sources.  We have the Argentinean people to thank for this green concoction.

So now that I talked about how good it is lets talk about how you can get some of this into your life to start feeding your taste buds.  It is so simple, takes little time at all to make.  The what you need , how to make it, and suggestions on how to eat are all below.

What You Need

3 cups of fresh herbage (I always start with Cilantro and add in others, such as Parsley, Tarragon, Thyme or Mint)

5 whole garlic cloves

1/4 cup lemon juice

3/4 – 1 cup of good quality olive oil, or any oil of choice

1-2 tsp Pink Himalayan Salt

High Speed Blender

What You Do

Put all the ingredients in the blender and blend until emulsified.  Store in the refrigerator for up to 5 days, but I am pretty sure it wont last that long.


Some Eating Suggestions

Eggs Green wc* I love to use this smeared on the base of my corn tortillas before I top with all the other toppings.

* It is great addition to a grain bowl adding a bright, punch of flavor.

* Salad dressing so right.

* Mixed in with beans both black, white, and lentil.

* Mix it into some warm pasta and protein of choice with some sauteed greens.

* Sauteed greens with a dollop of this will make you want to eat all the kale, cabbage and spinach there is.

* Topped on fries, scrambled and poached eggs.

* Top some homemade hummus or mix in when you make it from scratch.

* Dip some carrots, cucumbers or peppers for a great snack.

* Top a baked or roasted potato both sweet and white.

* Drizzle over falafel instead of tzatziki sauce, great dairy free alternative.

* Eat with a spoon feeding it directly into your mouth.

* However you see fit.
